Berry Yoghurt Bark

An extremely easy recipe for the whole family to enjoy. Particularly good for teething babies to help relive their gums, with no refined sugar this is a guilt free recipe with all the goodness! Leftover pieces can be stored for up to 1 month. Get creative & play around with different fruits & flavours this is one of our favourites…

Ingredients

2 cups of natural or greek yogurt

1 banana

1 handful of strawberries

For the topping

2 handfuls of chopped soft fruit (strawberries, raspberries, blueberries)

Desiccated coconut

Pomegranate

Method

– Line baking dish with clingfilm

– Place yogurt, banana & strawberries in a blender until smooth

– Pore the mixture into the baking dish (the mixture should be around 1cm in thickness)

– Spread the chopped fruit on top of the mixture, pushing some of the fruit in

– Scatter pomegrante & desiccated coconut on top

– Freeze for a minimum of 3 hours

– Use clingfilm to lift the bark from the baking dish then discard any clingfilm

– Break or cut into shards

– Leave to soften slightly at room temperature & enjoy!

– Store leftover pieces in the freezer for up to 1 month
